There is no way to have every item in stock at all times, but you don't want to lose a customer because you don't have what they need at that moment.  Instead, e2 solutions has a way to allow customers to add their email address to the site and request a notification when an item is in stock.

e2 can also code your site so a product will not appear when it is not in stock, thereby disabling the customer for ordering the item.
